I’ve been working toward adopting an entirely vegan diet for a while. It’s been a fairly long process, but a generally successful one. I’m not 100% yet, but am very close. If only cheesy pizza didn’t taste so good…
I’ve been putting effort recently into vegan baking and came across some decent recipes. Unfortunately, the best recipe that I’ve found for bran muffins is from a site that I don’t want to direct any traffic to (they appear to be anti-government conspiracy-theory wingnuts), so I can’t provide a link. I’d like to show the recipe, but posting it here would be a violation of the copyright. Oh well.
The recipe itself is pretty straightforward baking stuff. Nothing particularly radical. The recipe itself calls for something called “Ener-G egg replacer” that I can apparently find at the health food store. Instead, I did a little research and experimentation and found that I can substitute in a half of a banana for each egg. Rather than butter, the recipe suggest safflower oil. Having no safflower oil on hand, I used grapeseed oil instead. I’m getting rather good at this substitution thing. I’ve been using flaxseed as an egg substitute for cookie recipes for some time. Different substitutes work in different contexts. But the important thing is that the work. And the muffins are yummy.
I started down this vegan path for health reasons. I didn’t feel particularly bad when I started, but I certainly feel a lot better now. I’ve lost weight, gained muscle, and feel generally stronger. I used to take antacids like they were candy; now I never need the things. In retrospect, it’s mind-numbing to think of the toll that meat, milk, and cheese consumption was having on my body.
